They include 10 restaurants in the valley, whose common goal is to promote gastronomy, local agri-food, culture and the tradition of mountain cuisine. Its activity is concentrated around three axes: the gastronomic seasons (the slaughter and Lent, before and after Carnival; the foal, in May, and the trump, in September); training (with specific courses under the name Cuina Forum and knowledge transfer conference-workshop), and collaborations at events and with other groups. The historical legacy and a handful of traditions have ended up forging the good table of the Valley, with the life of farmers, the cultivation of the land, the care of the cattle, the quality of the water, the validity of the slaughter of the pig.
Els Fogons de la Vall de Ribes aims to search for and disseminate the basics of traditional Pyrenean cuisine: researching the origins and characteristics that define it, collecting old recipes and old techniques in the preparation of dishes, and even having present the recovery of the utensils and products with which this kitchen has always been accompanied.
